Start by breaking down the whole chicken into parts: breasts, thighs, drumsticks, and wings.
Remove the skin from the chicken breasts and set aside the skin for later use.
Chop the chicken into pieces and set aside.
Make a quick chicken stock from the bones by placing them in a large pot with chopped onions, carrot, celery, and bay leaves, then fill with cold water and bring to a boil.
Simmer the stock for 30-40 minutes, skimming as necessary.
Prepare the marinade for the chicken thighs by mixing soy sauce, sesame oil, honey, chopped garlic, and chopped ginger in a medium-sized mixing bowl.
Add the chicken thighs to the marinade and set aside.
For the drumsticks and wings, mix soy sauce, honey, Korean chili paste, chopped garlic, and chopped ginger in another bowl and add the chicken pieces to this marinade as well.
Prepare coconut rice by combining long grain white rice, coconut milk, water, salt, and sugar in a medium-sized saucepan and bring to a simmer with a lid until liquid is absorbed.
Stir-fry Choy sum in a preheated wok with oil, chopped garlic, and ginger, then add soy sauce and oyster sauce, cooking briefly to avoid mushiness.
Line a tray with greaseproof paper and place the marinated honey soy chicken thighs on one side and Korean drumsticks and wings on the other.
Season the chicken with salt and bake in a preheated oven at 180°C (350°F) for about 20 minutes.
While the chicken is baking, poach the chicken breasts in the simmering stock for about 15 minutes.
