Homemade Cinnamon Rolls

1/4 cup white sugar
1/2 cup warm water
1/2 cup warm milk
2 lightly beaten eggs
1 teaspoon salt
1/4 cup butter
2 teaspoons instant yeast

Melt 1 cup of butter in a medium-sized pan.

Add 1 cup of soft brown sugar to the melted butter and whisk together until it forms a thick toffee sauce.

Add 3/4 cup of crushed or coarsely chopped pecans to the toffee sauce and mix briefly until combined.

Rub a knob of butter inside a large oven baking tray.

Pour the toffee sauce into the bottom of the baking tray and set aside to cool.

In a mixing bowl, combine 3.5 cups of all-purpose flour and 1/4 cup of white sugar.

Add 1/2 cup of warm water, 1/2 cup of warm milk, 2 lightly beaten eggs, 1 teaspoon of salt, 1/4 cup of butter, and 2 teaspoons of instant yeast to the flour mixture.

Mix the dough in a mixer for 10 minutes, scraping down the sides as needed.

If the dough is too wet, add up to 1/4 cup of extra flour, tablespoon at a time, until it reaches the right consistency.

Cover the dough with a damp cloth and let it rise in a warm spot for 1.5 hours until doubled in size.

Punch down the dough to knock the air out and turn it out onto a floured surface.

Roll the dough into a 14 by 18 inch square (45 by 35 cm).

Brush the surface of the dough with 1/2 cup of melted butter.

Sprinkle the cinnamon and sugar mixture evenly over the surface of the dough.

Roll the dough tightly into a log and seal the edge with a little extra butter.

Cut the log into about 15 even pieces.

Brush the tops of the pieces with butter to help them separate in the pan.

Place the pieces in the baking tray over the sticky toffee sauce, evenly distributing them.

Cover the tray and let the rolls rise for another hour.

Preheat the oven to 375°F (190°C).

Bake the rolls for 20-30 minutes until cooked through.

Let the rolls cool for 2-3 minutes before turning them out onto a cookie tray.

Use a spatula to scrape any remaining sticky sauce from the baking tray and pour it over the cinnamon rolls.
