2 english cucumbers
1 cup shredded carrots
1/2 cup garbanzo beans
4 to 6 green onions
1/3 cup chopped cilantro
15 to 20 basil leaves
peanut dressing (made from peanut dipping sauce with added almond milk)
small baby tomatoes
lime juice
optional toppings: grilled chicken breast, grilled shrimp, avocado, angel hair pasta

Cut the end off of the cucumber.

Grate two english cucumbers.

Drain the grated cucumber to remove excess liquid.

Add one cup of shredded carrots to the bowl with the cucumber.

Add half a cup of garbanzo beans to the bowl.

Finely chop four to six green onions and add them to the bowl.

Finely chop a bunch of cilantro to yield about 1/3 cup and add it to the bowl.

Chiffonade 15 to 20 basil leaves, roll them up, and thinly slice them.
