1 tbsp minced garlic
8 oz uncooked tofu, diced
2 whole eggs
2 cups fresh bean sprouts
1 red bell pepper, thinly sliced
1 carrot, thinly sliced or spiralized
½ cup dry roasted peanuts, chopped
2 limes, cut into quarters
3 tbsp fish sauce
1 tbsp soy sauce
2 tbsp rice vinegar
1 tbsp sriracha sauce
¼ cup honey
4-6 tbsp powdered peanut butter

Remove pan from heat, draining excess liquid as needed, then return to medium-low heat. Push ingredients to one side, adding cooking spray as needed, then add eggs to the pan. Scramble until fully cooked and broken up into little pieces.

Stir together all ingredients, then add cooked spaghetti squash, sauce, bean sprouts, and peanuts to the pan - saving some peanuts for garnish. Toss mixture until fully combined.
