Broad Bean Salad

2 cups broad beans (fresh or frozen)
1/2 cup cherry tomatoes, halved
1/4 cup red onion, finely chopped
1/4 cup fresh parsley, chopped
1/4 cup feta cheese, crumbled (optional)
2 tbsp olive oil
1 tbsp lemon juice
1/2 tsp salt
1/4 tsp black pepper

If using fresh broad beans, blanch them in boiling water for 2-3 minutes, then cool in ice water and remove the outer skins. If using frozen, simply thaw them.
