1 thumb-sized piece ginger
4 dried red chillies
4 cloves garlic
2 tablespoons minced lemongrass

Cut beef into cubes and set aside.

Blend garlic, onion, ginger, galangal, and dried red chillies into a paste.

Heat vegetable oil in a large pot over medium heat until shimmering.

Add beef cubes to the pot and brown on all sides.
