3. Stir in the garlic, red peppers, and red chilli, cooking until fragrant.

4. Add the pumpkin, thyme, and stock, bringing to a boil.

5. Reduce heat and simmer until the pumpkin is tender.

6. Blend the soup until smooth, then stir in the double cream.

7. Season with sea salt and pepper to taste.

8. Serve hot, garnished with low fat creme fraiche and finely chopped chives.
