In a large mixing bowl, add 2 cups of all purpose flour.

Add 7 oz water gradually and mix it well.

Knead to form a dough, cover with a soft cloth, and let it rest for at least half an hour.

Chop a bunch of chives.

Cut 3 large shrimps into small pieces.

In a large bowl, add 1/2 pound of ground pork, chopped green onion, and ginger.

Add 1 tsp soy sauce, 1 tsp cooking wine, 1 tsp salt, 1 tsp white pepper powder, and 1 tsp soy bean paste. Mix well.

Optionally, add 2-3 drops of sesame oil.

Add chopped chive, shrimp, and cooked eggs to the bowl and mix well.

After the dough has rested for half an hour, knead it more to make it smoother.

Cut the dough in half and work on the first half.

Stretch the dough and roll it into a rope-like shape.

Cut it into small pieces, about the diameter of a quarter coin.

Press each piece flat before making the wrappers.

Use a dumpling roller to make the wrappers.

Hold and rotate the small dough with your left hand while rolling it with your right hand to form a near-round wrapper.

Add some filling in the center of a wrapper.

Hold the wrapper with your left hand and fold the edge with your right hand, sealing it airtight.

Boil 3 cups of water in a pan.

Add dumplings to the boiling water, turn the stove to medium high, and cover the lid.

Bring to boil, then add half cup of water, stir carefully, and cover it again.

After boiling, add another half cup of water, cover the lid, and let it boil.

Open the lid and let it cook for 3 more minutes.

Once all dumplings float on the surface, turn off the stove and put them on a plate.
