Wash and rinse potatoes in water to remove starch until water runs clear.

Drain the potatoes and cover them with clean cold water, refrigerate for 15-20 minutes.

After chilling, drain the potato slices and dry them using kitchen towels, ensuring they are as dry as possible.

In a dry bowl, add the dry potato slices, 1 tablespoon of olive oil, and a little salt, then toss to coat.

Lay the potato slices out on lined baking sheets without overlapping.

Bake in preheated oven for 20-25 minutes, flipping the chips halfway through.

Check chips at the 12-minute mark; remove any that are done and rotate the baking sheets.
