Heat vegetable oil in a deep pot.
Slice russet potatoes on a mandolin to 1/16 of an inch thickness.
Soak the potato slices in ice cold water to remove excess starch and keep them fresh.
Drain the potato slices and dry them off with a paper towel.
Carefully add the potato slices to the hot oil, ensuring not to overcrowd the pot.
Cook the potato slices at a temperature between 350°F and 375°F for about 15 minutes, starting with a high temperature for the first five minutes.
After five minutes, reduce the heat to maintain a temperature around 340°F and continue cooking for an additional 6-8 minutes until crispy.
Remove the chips from the oil and drain them on a towel.
Prepare a seasoning mix by combining 4 teaspoons of buttermilk powder, ½ teaspoon of salt, 1 teaspoon of onion powder, 1 teaspoon of garlic powder, ¼ teaspoon of black pepper, and 1 tablespoon of sugar, then grind to a fine powder.
While the chips are still hot, toss them with the seasoning mix in a bowl, gently shaking to coat.
Optionally, sprinkle additional salt on the chips to taste.
