Using a mortar and pestle or kitchen robot, crush the walnuts into small chunks, then set aside.

In a large bowl, pour 1 cup of grape-seed oil, 1 cup of whipping cream, ¼ tsp of salt, and 1 tsp of baking soda.

Whisk the ingredients together until the mixture is homogenous.

Add 2 cups of flour and whisk until the dough becomes thickening; then start to knead.

Add the last cup of flour slowly while kneading to control the consistency and softness of the dough. The dough should be soft but not very oily or crumbly.

Once the dough is ready, portion and form it into walnut-sized balls.

Traditionally, the dessert is formed using a sieve or grater; use the bottom of a vase as a stamp to form the dessert, or form the desserts by hand.

Form a small circle and fill each piece with 1 tsp of walnut chunks, then close the cookie and place on an oven tray.

Heat the oven to 380 °F.

Place the cookies in the heated oven and cook for 43-45 minutes, until the cookies have a beige colour. Then let them cool down to room temperature.

While the cookies are cooling, prepare the syrup. In a small pot, pour 3 cups of water and 3 ½ cups of sugar. Bring the mixture to a boil and boil it for 5 minutes on medium heat.

Then add 1 tsp of lemon juice and boil for 5 more minutes.

Let the syrup cool down for 8-10 minutes; your pinkie should be able to stay in the syrup for 5 seconds.

Transfer the cookies in a container to soak in the syrup.

Pour the warm syrup over the room temperature cookies slowly, then cover the container while allowing it to breathe and wait for 12 hours before serving.
