Heat butter and water in a pan. Add sugar, salt, mix and bring to boil over medium heat.

In another bowl add vanilla, egg and beat well with a hand mixer. Add the butter and sugar mix into the eggs and whisk again. Add the flour and mix again till the dough reaches a thick yet pourable consistency.

Transfer the dough into a plastic piping bag, fitted with a star nozzle.

Heat oil in a deep bottomed pan or skillet over medium-high heat. When it reaches 360°F add the churros, 3-4 at a time. Cook for 2 to 3 minutes on each side and keep turning till the churro is evenly golden browned on all sides. Remove and place on a paper towel to drain off excess oil.

Meanwhile, mix a cup of sugar and ½ tsp of ground cinnamon in a flat dish or big bowl. Add churros in the mix and roll to coat them evenly with sugar and cinnamon. Serve warm with chocolate sauce.
