1

Wash the fresh pigtails in cool water with white vinegar to inspect each piece.

2

Slice up a half of a red bell pepper into medium-sized slices.

3

Chop up an onion for seasoning.

4

Add the bell pepper and onion to a glass 13x9 pan for cooking.

5

Drizzle extra virgin olive oil over the pigtails in the pan.

6

Sprinkle garlic powder, onion powder, Billa complete seasoning, pink Himalayan salt, black pepper, and smoked paprika over the pigtails.

7

Rub the seasoning and oil into both sides of the pigtails with gloved hands.

8

Pour 1/4 to 1/2 cup of chicken broth into the pan, avoiding pouring it directly on the meat to keep the seasoning intact.

9

Cover the pan with foil and bake in the oven at 350°F for 2 and 1/2 hours.

10

After 2 and 1/2 hours, remove the pan from the oven and check the pigtails.

11

Baste the meat with the rendered fat and broth from the pan.

12

Add a generous amount of Sweet Baby Ray's barbecue sauce on top of the pigtails.

13

Spread the barbecue sauce with a spoon, allowing some to fall into the sides.

14

Return the pan to the oven without foil and bake for an additional 30 minutes at 350°F.

15

Let the meat rest for a few minutes in the pan after removing it from the oven.

16

Serve the barbecue pigtails on a platter, optionally with greens on the edge.
