Jamaican Rum Cake

1 pound butter
2 cups brown sugar
8 eggs
1 tablespoon orange juice
1 tablespoon lime juice
1/2 pound prunes
1 pound raisins
1/2 cup candied fruits
3 cups red label wine
1 cup white rum
1 tablespoon vanilla
6-7 tablespoons browning
1 tablespoon rose water
1 pound cake flour
1 tablespoon baking powder
1 tablespoon mixed spice

Add 1 pound of room temperature butter to a mixing bowl.

Add 2 cups of brown sugar to the butter and mix until smooth and creamy.

Gradually add 8 eggs to the mixture, mixing well after each addition.

Add 1 tablespoon of orange juice and 1 tablespoon of lime juice to the mixture.

Blend together 1/2 pound of prunes, 1 pound of raisins, and 1/2 cup of candied fruits with 3 cups of red label wine and 1 cup of white rum.

Add the blended fruit mixture to the butter and sugar mixture.

Add 1 tablespoon of vanilla extract and 6-7 tablespoons of browning to the mixture, adjusting for desired darkness.

Add 1 pound of cake flour to the mixture gradually, about a third at a time, mixing until smooth.

Add 1 tablespoon of baking powder and 1 tablespoon of mixed spice to the mixture and mix well.

Add 2 cups of plain bread crumbs to the mixture and mix until well combined.

Prepare a 9 or 10 inch baking pan by lining it with parchment paper and greasing it.

Pour the batter into the prepared baking pan.

Bake the cake in a preheated oven at 350 degrees Fahrenheit for about 1 hour.

While the cake is still warm, pour additional white rum and red label wine over the cake to soak in.
