Prepare the pastry by mixing the flour, unsalted butter, water, and salt until a dough forms. Roll out the dough and place it in a tart pan.

For the compote, peel and chop 3 apples. Cook them in a saucepan with 2 tbsp of water, 20g of butter, 20g of brown sugar, vanilla, and cinnamon (if using) until soft.

Spread the apple compote over the pastry base.

Slice 4 apples and arrange them on top of the compote. Drizzle with 20g of honey and dot with 30g of butter.

Bake the tart in a preheated oven until the apples are tender and the pastry is golden.
