Start by making the gløgg extract with cardamom pods, black peppercorns, star anise, whole cloves, cinnamon sticks, brown sugar, orange juice, orange peel, and water. Simmer for about an hour to an hour and a half.

Mix 300 g of all-purpose flour, 1/4 teaspoon salt, and 2 1/2 teaspoons baking powder in a bowl.

In another bowl, whisk together 500 ml of buttermilk, 2 tablespoons of sugar, 80 ml of vegetable oil or melted butter (cooled), 2 large eggs, and 1/2 teaspoon of vanilla extract.

Combine the wet and dry ingredients until smooth, adjusting consistency with more flour or buttermilk if necessary.

Heat a cast iron æbleskiver pan on an electric stove and grease each well with butter.

Pour batter into each well, filling them halfway, and cook until the bottoms are golden.

Turn each æbleskiver a quarter turn, then flip them over to cook the other side until golden.

Remove from the pan and place in a glass dish to cool slightly.
