Slice the bananas in a bowl.
Add brown sugar, nutmeg, and a pinch of salt to the bananas and mix.
Melt butter in a saucepan and add the banana mixture, cooking for about 5 minutes.
Add walnuts to the banana mixture.
In a separate bowl, combine flour, sugar, baking powder, and salt and whisk together.
Separate the eggs, placing egg whites in one bowl and yolks in another.
Whisk the egg whites until light and fluffy.
In the bowl with the yolks, mix in milk and vanilla extract, then add melted butter.
Combine the egg yolk mixture with the dry ingredients and mix.
Fold the whipped egg whites into the batter.
Melt butter in the æbleskiver pan.
Pour a little batter into each well, add banana walnut mixture, and top with more batter.
Cook until firm around the edges, then turn using a knitting pin.
Cook until golden brown on all sides, about 3-4 minutes per side.
Dust with powdered sugar before serving.
