1

Start by preparing the brewing area and ensuring everything is clean.

2

Preheat 20 liters of water to about 71 degrees Celsius.

3

Add 4 kg of Pilsner malt and 500 g of Munich malt to the water to create the mash.

4

Mix in a few handfuls of rice hulls to improve flow during sparging.

5

Maintain the mash temperature at 67 degrees Celsius for 90 minutes, then raise to 76 degrees Celsius for mash out.

6

Sparge with 15 liters of water at 76 degrees Celsius, being careful not to over-sparge.

7

Bring the wort to a boil and add 60 g of Saaz hops for bittering at the start of the boil.

8

With 15 minutes left in the boil, add 25 g of Saaz hops for flavoring.

9

At flameout, add 30 g of Saaz hops and let the wort settle for 10 minutes before transferring.

10

Transfer the cooled wort into a cube for no-chill fermentation.

11

Use yeast from a previous batch to pitch into the fermentation vessel after cooling.
