1

Remove the membrane and fat from the kidney carefully.

2

Cut the kidney into slits approximately two fingers long.

3

In a container, add the kidney slices, salt, and vinegar, cover, and refrigerate for 2 hours.

4

For the chinchulín, remove excess fat and cut into pieces to form 'ears'.

5

In a bowl, mix the juice of 2-3 lemons, oregano, red pepper flakes, olive oil, and minced garlic to create a marinade.

6

Add the chinchulín to the marinade, mix well, and refrigerate for at least 1 hour.

7

Preheat the grill until your hand can only hold it for 7-8 seconds.

8

Place the marinated chinchulín on the grill and cook for 20-30 minutes, turning occasionally after the first 15 minutes to form a crispy crust.

9

Cook the un-marinated chinchulín in the same way, ensuring to turn them for even cooking.

10

Add sausages to the grill and cook for 20-25 minutes on each side.

11

After 25 minutes, check the chinchulín for a golden brown color and turn them over if necessary.

12

Add halved lemons to the grill to warm up as a side.

13

Remove everything from the grill once cooked, including kidneys, chinchulín, and sausages.
