Wash the chinchulines thoroughly under cold water, ensuring to clean inside as well.
Drain the chinchulines well to remove excess water.
Trim excess fat from the chinchulines, leaving about 1 cm of fat for cooking.
Cut the chinchulines into small pieces, referred to as 'orejitas'.
In a bowl, combine the juice of 1 lemon (or 2 if needed), chopped parsley, and 2 cloves of garlic.
Add a pinch of oregano and a teaspoon of salt to the mixture.
Mix well and let the chinchulines marinate in the refrigerator for at least 2 hours or overnight for better flavor.
Preheat the air fryer to 200°C.
Place the marinated chinchulines in the air fryer basket, ensuring they are spread out evenly.
Cook the chinchulines for 15 minutes, flipping them halfway through.
After 15 minutes, check for doneness; if they need more crispiness, cook for an additional 5 minutes.
While the chinchulines are cooking, prepare additional pork strips marinated in the same mixture for serving.
After 20 minutes total for the chinchulines, remove them from the air fryer and check for crispiness.
Plate the chinchulines and serve with the reserved parsley and garlic mixture drizzled with olive oil.
