Mix yeast with warm water and let it sit until frothy, about 5-10 minutes.
Combine flour and salt in a large bowl.
Add olive oil and the yeast mixture to the flour, mixing until a dough forms.
Knead the dough on a floured surface for 5-7 minutes until smooth.
Cover the dough with a cloth and let it rise in a warm place until doubled, about 1 hour.
In a skillet, sauté onions in olive oil until translucent, about 3-4 minutes.
Add ground meat and cook until browned, about 5-7 minutes.
Stir in spices, pine nuts, and parsley, cooking for an additional 2-3 minutes.
Remove from heat and add lemon juice, mixing well.
Preheat the oven to 375°F (190°C).
Divide the dough into small balls and roll each into a circle.
Place a spoonful of the meat mixture in the center of each circle.
Fold the dough over the filling to create a triangle and pinch the edges to seal.
Place the fatayer on a baking sheet and brush with beaten egg.
Sprinkle sesame seeds on top before baking.
Bake for 20-25 minutes until golden brown.
