Kale is nutrient-dense, and chard is often less expensive.
In a 24 cm diameter pot, add two turns of oil and the coarsely chopped onion.
Add the bacon cut into large pieces, the carrot, and the celery cut as desired, and sauté.
While sautéing, clean the cabbage by removing the hard stem, peel the pumpkin, and prepare the other vegetables.
Add the diced pumpkin, cabbage, and any other vegetables you like, and cover with water.
When it boils, add the cooked beans or chickpeas, the raw lentils, and the mixed whole grains (or choose one or use what you have). Calculate a total of one full tablespoon per person.
Season with salt, pepper, a bay leaf if desired, and chili.
Everything should be covered with water, about one centimeter above the level of the vegetables.
Let it boil slowly for an hour with the lid on, stirring occasionally.
Remove from heat, taste for salt, and stir a little to break it up.
Prepare bowls and top with cooked bacon. Prepare six slices of bread for crostini.
Drizzle with good oil, add fresh pepper, and enjoy this incredible and simple soup.
