Parboiled Nettles

1 bunch fresh nettles
4 cups water
1 tsp salt
1 tbsp olive oil
1 clove garlic, minced
1/2 tsp black pepper

Wear gloves to handle the nettles to avoid stinging.

Bring 4 cups of water to a boil in a large pot.

Add 1 tsp of salt to the boiling water.

Carefully add the nettles to the boiling water and cook for 2-3 minutes until wilted.

Remove the nettles from the pot and drain in a colander.

Once cooled, squeeze out excess water from the nettles and chop coarsely.

In a skillet, heat 1 tbsp of olive oil over medium heat.

Add the minced garlic and sauté for 1 minute until fragrant.
