Today, it enjoys global popularity, with many variations adapting to local tastes.

Cherry juice adds flavor without alcohol
Combine superfine sugar, vegetable oil, and homemade dahi in a bowl.
If using eggs, substitute the yoghurt with 4 whole eggs, mixing them in one at a time.
Add room temperature milk to the wet ingredients and mix well.
Sift in maida, cocoa powder, baking powder, and baking soda into the wet mixture.
Fold the dry ingredients into the wet mixture without overmixing.
Divide the batter between three 8-inch pans for thin layers.
Bake in a preheated oven at 180° C for about 30 minutes.
In a saucepan over medium heat, combine superfine sugar, water, and 1 cup of fresh pitted cherries to make cherry syrup.
Cook until the sugar dissolves completely and the mixture comes to a boil, then strain into a bowl.
Return the cherries to the saucepan, add another cup of fresh cherries, sugar, cornflour, and water to make cherry filling.
Cook until the cherries break down and the mixture becomes jammy and thick, then let cool completely.
Melt 70% dark chocolate and spread it on the back of a baking tray, then refrigerate until firm to make chocolate curls.
Scrape the set chocolate to create curls and store in the fridge until needed.
Chill 2 cups of whipping cream and beat until stiff peaks form, without adding extra sugar.
For chocolate ganache, pour 1/2 cup of heated fresh cream over finely chopped dark chocolate, let sit, then mix until smooth.
Assemble the cake by placing the first layer of chocolate sponge on a turntable and soaking with cherry syrup.
Create a well of whipped cream around the edges and fill with cherry filling, then spread a layer of whipped cream on top.
Repeat the process with the remaining layers, frosting the top and sides with whipped cream.
Press chocolate curls onto the sides of the cake and pour cooled chocolate ganache on top.
Use a piping bag with a large star tip to make swirls of whipped cream around the edges and top with fresh cherries.
