Cultural Context

Originating from the Black Forest region of Germany, Black Forest Cake is a celebration of rich chocolate, tart cherries, and whipped cream. Traditionally associated with festive occasions, this cake embodies the region's love for cherries and Kirsch, a cherry schnapps. 1

Measure out and sift 1 cup of all-purpose flour, 1/2 cup of cocoa powder, and 1 cup of sugar together in a sifter.

2

Add 1 teaspoon of baking soda, 1/2 teaspoon of baking powder, and a little salt, mixing well.

3

In a separate bowl, combine 1/2 cup of buttermilk, 1/4 cup of oil, 1 egg, and a splash of vanilla extract, whisking until combined.

4

Add the wet ingredients to the dry ingredients and mix until just combined, being careful not to overmix.

5

Bloom the cocoa by adding 1/2 cup of hot black coffee to the batter and stir until smooth.

6

Spray a baking pan with non-stick cooking spray and pour the batter into the pan.

7

Bake in a preheated oven at 350°F for about 30 to 35 minutes, until risen and a toothpick comes out clean.

8

While the cake is baking, prepare the cherry mixture by combining 1/2 cup of sugar, 2 tablespoons of cornstarch, and a pinch of salt in a pan.

9

Add 2 cups of thawed and strained cherries, 2 tablespoons of water, and 2 tablespoons of brandy to the pan and mix well.

10

Bring the mixture to a simmer over medium heat, stirring until it thickens and becomes glossy.

11

Add a touch of freshly grated nutmeg and a little almond extract to the cherry mixture, stirring to combine.

12

Once the cake is baked and cooled, poke holes in it with a fork and spoon over a mixture of reserved cherry juice and a little brandy.

13

Spread lightly sweetened whipped cream over the top of the cake and add the cherry mixture on top.
