Start by adding 180 g sugar to a bowl.

Add 5 eggs (yolks and whites together) to the sugar.

Melt 150 g of butter in a saucepan until warm, being careful not to burn it.

Beat the sugar and eggs together, increasing speed until the sugar dissolves and the eggs are well beaten.

Sift in 180 g flour, 1.5 teaspoons baking powder, a pinch of bicarbonate of soda, 3 teaspoons cocoa powder, and a pinch of salt into the mixture.

Mix well while gradually adding the melted butter that has cooled slightly.

Add a little vanilla essence and chocolate essence to the mixture and mix again.

Prepare two baking trays by buttering them and placing oil paper inside.

Pour equal quantities of the mixture into each tray.

Preheat the oven to 180°C and bake for 20 minutes.

While cooling, make sugar syrup by boiling 3/4 cup water with 100 g sugar until the sugar dissolves, adding a little vanilla and chocolate essence.

Prepare whipping cream by beating it until thick and creamy, using a bowl of ice or ice water to help the process.
