Sift together 140g all-purpose flour and 35g cocoa powder three times.

Add 6 room temperature eggs to the mixing bowl and start beating on medium speed for about 1 minute.

Gradually add 200g sugar while beating until the mixture becomes pale, thick, and fluffy, about 7 to 8 minutes.

The batter should fall in thick ribbons when lifted.

Gently fold in the sifted flour mixture using a spatula, being careful not to overmix.

Divide the batter into 2 equal portions for baking in two 8-inch round cake pans lined with parchment paper.

Bake at 160°C for 20-25 minutes in a preheated oven.

While the cakes are baking, prepare a syrup by bringing 1 cup water and 1 cup sugar to a boil, then simmer for 2-3 minutes before turning off the heat.

Add 1 tbsp vanilla extract and 1 small stick of cinnamon to the syrup and let it cool completely.

Once the cakes are done, slice each cake horizontally into two layers, creating a total of 4 layers.

For the whipped cream, use 1½ cups of chilled whipping cream, 3 tbsp icing sugar, and 2 tbsp softened butter, and beat until medium stiff peaks form.

To assemble the cake, generously add the prepared syrup to each layer.

Spread whipped cream evenly between each layer and add blueberry compote between the layers as well.

Frost the entire cake with whipped cream and refrigerate for at least 1 hour.
