1

Pit fresh cherries using a cherry pitter.

2

In a saucepan, add sugar and water, and bring to a simmer to dissolve the sugar.

3

Add the pitted cherries to the saucepan and simmer for another minute to create a syrup.

4

Remove from heat and add about a quarter of a cup of Kirsch brandy to the cherry mixture.

5

Transfer the cherry mixture to a jar or bowl and refrigerate for a couple of days to enhance flavor.

6

Sift together cake flour and Dutch cocoa powder in a bowl.

7

Bring a couple of inches of water to a simmer in a saucepan and place a metal or glass mixing bowl on top.

8

In the mixing bowl, combine eggs, sugar, and salt, mixing until the mixture feels barely warm to the touch.

9

Attach a whisk attachment and whip the egg mixture on high for about five minutes until it reaches the ribbon stage.

10

Sift in the flour and cocoa mixture gradually, folding gently to avoid knocking out air.

11

Melt butter until barely warm and take one cup of the batter to mix with the butter to lighten it.

12

Add the butter mixture back into the main batter along with vanilla extract and fold until homogeneous.
