Lightly grease a deep and narrow muffin tin.
Add slices of Virginia ham to each muffin cup, allowing them to hang over the edges.
In a mixing bowl, whisk together 8 whole eggs until lightly beaten.
Add red bell pepper, green onion, fresh parsley, Old Bay seasoning, sour cream, Celtic sea salt, black pepper, and 1/2 cup milk to the eggs and mix well.
Sprinkle 3/4 cup cheddar cheese on top of each ham piece in the muffin tin.
Pour the egg mixture over the ham and cheese in each muffin cup, filling them up as needed.
Bake in the oven for 20 to 25 minutes until set.
Let the ham and egg cups cool for 10 to 15 minutes before loosening them from the muffin tin with a knife.
Freeze the cups in a single layer before transferring them to a ziplock bag.
