Vegetable broth reduces calories and is often less expensive.
Wash and dry the short ribs.
Season the short ribs with salt and black pepper.
Add a little olive oil to the Dutch oven to prevent sticking.
Sear the short ribs in the Dutch oven until browned on all sides.
Remove the short ribs and set aside.
Dice onion and leek, and add them to the Dutch oven.
Add whole garlic cloves and chopped celery (1 to 1.5 inches).
Peel and add carrots to the Dutch oven.
Mix spices: black pepper, paprika, cumin, and baharat.
Add chicken stock to the vegetables and mix well.
Pour in red wine and reduce it slightly to cook off the alcohol.
Add honey, thyme, rosemary, and bay leaves to the mixture.
Mix everything well in the Dutch oven.
Cover and place in the oven at 350 degrees Fahrenheit for 2.5 to 3 hours.
Skim off the fat from the surface after cooking.
Serve with herbs and garnish with toasted almonds or serve over Moroccan couscous or rice.
