Season beef short ribs with sea salt.
Sear the beef short ribs in hot oil, ensuring to sear all six sides for maximum flavor.
Add mushrooms to the pan and avoid overcrowding for a good color.
Once the mushrooms are done, add them to the short ribs.
Add finely chopped onions, carrots, and celery to the pan.
Add whole, bashed garlic cloves to the pan, avoiding burning them.
Add fresh herbs, beef stock, Worcestershire sauce, pomegranate molasses, gravy granules, and tomato puree to the pan to create a rich sauce.
Pour the bubbling sauce into a casserole dish with the short ribs.
Cook the short ribs in the oven at 160°C on the true fan setting for about 4 hours.
Remove the short ribs from the dish and let them rest.
Strain the cooking juices from the casserole dish into a bowl, keeping the vegetables for another dish.
Boil potatoes for creamy mashed potatoes as a side dish.
Saute onions in olive oil for 10-12 minutes until caramelized and soft, then remove from the pan.
Char the cabbage in the same pan, stirring only after it has charred.
Add peas and grated garlic to the charred cabbage, then return the caramelized onions to the pan.
Add black pepper, dried mint, and chicken stock to the pan, reducing the stock on high heat.
Finish the cabbage dish with a knob of butter.
Mash the boiled potatoes through a sieve for a creamy texture, adding melted butter and warm milk infused with a bay leaf.
Season the mashed potatoes with black pepper and salt, then mix in haloumi cheese and Gran Padano cheese.
