Chop up 2 small onions into large pieces; they will be discarded later.

Chop up about 4 rainbow carrots into large pieces; peeling is optional.

Season all sides of the 3 boneless short ribs with kosher salt and cracked black pepper.

Heat a Dutch oven on the stove to about 7 and add a little oil (avocado or olive oil).

Sear the short ribs in batches until they have a nice crust on each side; do not overcrowd the pot.

Add the chopped carrots, onions, garlic, and sprigs of thyme and rosemary to the pot.

Add in 1 carton of beef broth and return the lid to the Dutch oven; allow to simmer.

Nestle the seared short ribs back into the pot, ensuring they are submerged in the liquid.

Add the whole head of garlic, 2-3 sprigs of rosemary, 5-6 sprigs of thyme, and 2 bay leaves to the pot.

Cover the pot and place it in the oven at 350°F for about 2.5 hours or until the short ribs are fork-tender.

Remove the vegetables and herbs from the pot using a strainer; skim off excess fat from the sauce.

Simmer the sauce for a bit longer; if a thicker gravy is desired, add cornstarch.

Return the short ribs to the pot and let them simmer for an additional 10 minutes before serving.
