Prepare beef short ribs by removing all the fat from the top of the ribs.

Apply 1/2 tsp of kosher salt per lb of meat and place in the fridge overnight to dry brine.

Prepare the Weber Jumbo Joe for low and slow cooking at 225F, adding a water tray above the coals and wood chips for smoking.

Once the temperature is stable, place the beef short ribs onto the grill opposite the coals and insert a digital thermometer into the thickest part of the meat.

Cook slowly until the ribs are probe tender, aiming for an internal temperature of around 203-205F, which should take about 6-7 hours.
