Hasselback Roast Potatoes

Place two spoons on a cutting board and lay a potato in between them to prevent cutting all the way through.
Make slices in the potato every half a centimetre down to the spoons.
Place the sliced potatoes into a tray.
Muddle thyme with salt to release the oils and flavor.
Add olive oil to the muddled thyme and mix well.
Pour the flavored oil over the potatoes, ensuring all cut sides are facing up.
Put the tray in the oven to roast the potatoes.
After 45 minutes, brush the potatoes with thyme and olive oil mixture.
Sprinkle cheese on top of the potatoes and return to the oven for another 15 minutes until crispy.
