Light 2 Komado Joe fire starter cubes and let them burn for about 10 minutes.
Set the accessory rack in the lower position and place both halves of the heat deflector on it.
Place both halves of the grill on top and stabilize the grill temperature at 425°F.
Mix together 1/3 cup extra virgin olive oil, 4 cloves minced garlic, 1/2 teaspoon dried thyme, 1/2 teaspoon rubbed sage, 1/4 teaspoon black pepper, and 1/2 teaspoon honey barbecue rub.
Slice off the bottom of several russet potatoes to make them flat and insert skewers on each side to prevent slicing all the way through.
Slice the potatoes thinly without cutting through, then fan them apart.
Grease a 10-inch cast iron skillet and coat the potatoes with the oil mixture, ensuring it gets into the cuts.
Place the skillet on the grill and cook for about 30 minutes, then baste with the remaining oil mixture.
After another 20 minutes, sprinkle with coarse sea salt and grate Parmesan cheese on top.
Cook for an additional 10 minutes until done.
