Cut beef into large chunks and season with salt and black pepper.
Heat vegetable oil in a large pot over medium heat.
Add chopped onion and garlic, sauté until translucent, about 5 minutes.
Add beef chunks and brown on all sides, approximately 10 minutes.
Pour in water to cover the meat, add bay leaves, and bring to a boil.
Reduce heat to low, cover, and simmer for 2-3 hours until the beef is tender.
Remove the beef and shred it using two forks, discarding any bones.
Return the shredded beef to the pot, stirring to combine with the cooking liquid.
In a separate pot, bring water to a boil and add maize meal slowly, stirring continuously.
Cook maize meal until thickened and smooth, about 10-15 minutes.
Serve the shredded beef (seswaa) alongside the maize meal (phaletšhe).
Prepare the salad by mixing cucumber, salt, olive oil, white vinegar, sugar, feta cheese, spring onion, mint, and black pepper.
