Seswaa is a traditional dish from Botswana, often enjoyed during celebrations and communal gatherings. It showcases the country's culinary heritage, emphasizing slow-cooked meat that is tender and flavorful. Today, Seswaa is cherished not only in Botswana but also in neighboring countries, reflecting the shared cultural practices of Southern Africa.

Cut the beef into large chunks and season with salt and black pepper.
Heat vegetable oil in a large pot over medium heat until shimmering.
Add the beef chunks and sear until browned on all sides, about 5-7 minutes.
Remove the beef and set aside. In the same pot, add chopped onions and sauté until translucent, about 3-4 minutes.
Add minced garlic and cook until fragrant, about 1 minute.
Return the beef to the pot and add water to cover the meat.
Add bay leaves, thyme, and cumin. Bring to a boil, then reduce heat to low.
Cover and simmer for about 2-3 hours, until the beef is tender and falls apart easily.
Remove the beef from the pot and shred it using two forks.
Return the shredded beef to the pot and add chopped carrots and potatoes.
Stir in green chilies and cook until the vegetables are tender, about 20-30 minutes.
Adjust seasoning with salt and black pepper to taste.
Finish with a splash of lemon juice before serving.
Serve hot with traditional sides like pap or rice.
