Nyama Choma, meaning 'grilled meat' in Swahili, is a beloved dish in Zambia, often enjoyed during social gatherings and celebrations. It reflects the country's rich culinary heritage, where grilling meat over open flames is a cherished tradition. Today, Nyama Choma has gained popularity beyond Zambia, with variations found in neighboring countries, making it a staple at barbecues and festive occasions across the region.

Prepare the marinade by blending rosemary leaves, garlic cloves, lemon juice, onion, cooking oil, ground paprika, salt, ground cumin, and stock cubes into a paste.
Make cuts on the goat meat to allow the marinade to penetrate.
Apply the marinade on the surface and inside the cuts of the meat.
Refrigerate the marinated meat to chill.
Heat a pan and add a tablespoon of oil for grilling.
Place the marinated goat meat in the hot pan to get grill marks.
Transfer the meat to aluminum foil, adding rosemary and garlic on top.
Wrap the meat loosely in aluminum foil and make holes in the foil.
Preheat the oven or grill while preparing the meat.
Roast the wrapped meat in the oven or grill at medium-low heat for 3-5 hours, checking for doneness.
Optionally, apply honey and favorite seasonings on top before transferring back to the oven or grill uncovered.
Grill or broil the meat at high heat for about 5 minutes to dry out the surface.
Serve the nyama choma with ugali and kachumbari.
