1

Purchase sorrel from a Caribbean or Mexican supermarket; it can be fresh or dried.

2

In a large stock pot, add 12 cups of water and bring to a boil over high heat.

3

Add about 1.5 ounces of peeled and pounded ginger, 2-4 cinnamon sticks, and about a tablespoon of cloves to the boiling water.

4

Boil for about 5 minutes to infuse the spices into the water.

5

Once infused, add the sorrel leaves to the pot and remove from heat.

6

Allow the mixture to sit overnight, up to 12 hours.

7

The next day, strain the mixture into bottles, allowing it to sit for 10-15 minutes to extract all the juice.

8

Sweeten the strained sorrel with 2 cups of sugar, adjusting to taste after it cools.

9

If using fresh sorrel, rinse thoroughly to remove any sediments before adding to the pot.

10

For fresh sorrel, boil for just a couple of minutes to retain its medicinal properties, then remove from heat and let sit overnight.
