Pork Dumplings in Spicy Sauce

Start by preparing the filling for the dumplings.
Use 1/2 pound of ground pork for the filling.
Chop 3 green onions finely (or use 1 large green onion to get about 2-3 tablespoons).
Add 1/4 teaspoon of grated ginger and 1 clove of garlic to the pork.
Mix in 2 teaspoons of soy sauce, 2 teaspoons of cornstarch, a pinch of salt, 1/2 teaspoon of sugar, and 1/2 teaspoon of sesame oil.
Add black pepper to taste and mix everything well to combine.
Prepare the dumpling wrappers by wetting the edges with water.
Place about 1 teaspoon of the filling in the center of each wrapper.
Fold the wrapper in half and pinch the edges tightly to seal.
Repeat until all filling is used, making about 20 dumplings.
Heat a pan over medium-high heat and add a little oil to prevent sticking.
Place the dumplings in the pan and add 1/4 cup of water to the pan.
Cover the pan and let the dumplings steam for about 5 minutes until the water evaporates and the dumplings are cooked through.
Prepare the dipping sauce by mixing 1 tablespoon of soy sauce, 1 teaspoon of rice vinegar, and 1 teaspoon of water.
Serve the dumplings with the dipping sauce.
