Chinese Pork Dumplings

Combine 1 and 3/4 cups flour and 1/2 cup water until you have a sticky ball of dough.

Plop the dough onto a floured surface and knead for a couple of minutes until it has a nice consistency and is gluten and springy.

Wrap the dough in plastic wrap and let it sit for at least 10 minutes.

Peel and mince 1 inch of ginger for the dumplings.

Cut another inch of ginger into matchsticks and combine it with soy sauce, rice vinegar, and scallions to make the dipping sauce.

Finely chop 1 leek, rinse it, and dry it to remove dirt.

In a bowl, mix together the pound of ground pork sirloin, chopped leek, scallions, minced ginger, soy sauce, and clove of garlic.

Put the filling into a pre-chilled bowl and refrigerate while preparing the wrappers.

Roll the dough into logs, segment into little balls, and roll them out to make dumpling wrappers.

Bring a large pot of water to a boil.

Fill each wrapper with the pork filling, fold it over, and pinch to seal tightly.

Boil the dumplings for about 6 minutes until cooked through.
