Julienne the red onion.
In a mixing bowl, prepare the marinade for the vegetables by adding 2 tablespoons of soy sauce and 2 tablespoons of vinegar, then mix.
Add the chopped red onion and julienned tomatoes to the marinade.
In another mixing bowl, add the remaining soy sauce, 2 tablespoons of vinegar, some ajia mario, the chicken flavor, and smashed garlic.
Cut the beef into small strips for faster cooking and add it to the marinade, mixing everything together. Let it sit for a few minutes.
Add oil to a wok or frying pan and heat it to medium-high.
Add the marinated meat to the wok, but do not add all the meat at once to avoid cooling down the oil.
Cook the meat until well done, then set it aside, ensuring to keep all the juices from the wok.
Add more oil to the wok and stir-fry the vegetables (onion and tomato) for about a minute.
Optionally, add 1/8 of a tablet of chicken or beef bouillon for more flavor and stir-fry for a few more seconds to mix.
Add the cooked meat back to the wok along with its juices, mixing everything together.
Add more soy sauce, vinegar, ajia mario, cilantro, and beef broth, then mix everything well.
Season with salt and pepper to taste.
