Add 2 eggs to the mixture for binding.

Process the mixture in the food processor until it is well combined and thickens up, with no chunks of chicken remaining.

Prepare air fryer racks by laying them on paper towels and spraying with cooking spray.

Use a small cookie scoop to portion out the mixture onto the air fryer racks, pressing down to shape them into nuggets.

Spritz the nuggets with cooking spray for extra crispiness.

Preheat the air fryer to 400°F and cook the nuggets for 15 to 20 minutes, flipping halfway through.

Ensure the internal temperature of the nuggets reaches 165°F before serving.
