Add ground chicken to a bowl.

Add 1 egg and a pinch of salt to the bowl.

Mix until well combined and smooth.

Scoop a bit of the mixture and roll it into a small ball.

Toss the ball in a bowl of cornstarch to coat.

Shape the coated ball into a nugget shape and place on a parchment lined baking sheet.

Repeat until all mixture is shaped into nuggets.

Freeze the nuggets for 1 to 2 hours to help them hold their shape.

In a bowl, add all-purpose flour and seasonings: kosher salt, black pepper, garlic powder, onion powder, smoked paprika, cayenne pepper, and optional chili seasoning.

Add Lefty spicy seasoning to the bowl.

Slowly whisk in club soda until you achieve a smooth, pourable batter thick enough to coat the back of a spoon.

Heat oil to 375°F.

Take nuggets out of the freezer once firm.

Dip each nugget into the batter, letting excess drip off.

Gently drop the nugget into the hot oil, separating them with a spatula to avoid sticking.

Fry nuggets for 3 to 5 minutes until golden brown and crispy, or until they reach an internal temperature of 165°F.

Continue frying the rest of the nuggets, ensuring not to overcrowd the pan.

Once done, remove nuggets from oil and check for golden color and crunch.

Serve with sauce of choice, such as ranch, barbecue, or a simple honey mustard made of Dijon mustard and honey.
