Cut the ends off the cucumbers.
Slice cucumbers into 1-2 mm pieces using a slicer.
Place sliced cucumbers in a bowl and cover with a brine made of water and salt.
Let cucumbers sit in brine for about 1-2 hours to remove excess water.
Prepare the second brine by boiling 110 mL of water with 500 g of sugar, bay leaves, and black peppercorns.
Add 400 mL of 10% white vinegar to the second brine once it boils.
Strain the cucumbers and do not rinse them to keep the salt.
Fill jars with cucumbers and cover with the second brine.
Add mustard seeds, allspice, and bay leaves to each jar.
Pasteurize the jars in boiling water for approximately 10 minutes.
