2 cup refined flour
2 tsp instant yeast
2 tsp sugar
1 tsp salt
2 tbsp oil
1 cup water
250 gm chicken boneless
1 tbsp ginger garlic paste
2 tsp soy sauce
1 egg
1 tsp chilli flakes
2 tbsp maida
2 tbsp corn starch
Oil for frying
2 tsp oil
¼ cup chopped onions
2 tsp chopped garlic
2 tsp chopped ginger
¼ cup chilli garlic sauce
3 tbsp schezwan sauce
2 tbsp chopped spring onions
¼ cup thinly sliced red peppers
¼ cup thinly sliced yellow pepper
¼ cup shredded lettuce

Take the ingredients for the dough in a bowl & knead to a smooth soft dough.

Proof the dough for 2 hours till it doubles, then knock it back & cut into small portions.

Roll it out into an oval shape & place a chopstick in the middle & fold in half.

Remove the chopstick & place the bao on a piece of parchment paper. Proof these for another 30 mins.

While the bao is proofing, take all for the chicken marination in a bowl, mix well & marinate for 15 mins, now add flour & corn starch & mix well.

Deep fry the chicken in hot oil till golden & crispy & remove.

Next for the sauce, heat oil in a pan & fry the onions, ginger & garlic for a few seconds, then add the sauces & mix well.

Add the chicken, toss it well & do finish with some spring onions.

Mix all the ingredients for the fresh salad & keep aside.

Steam the proofed baos in a steamer for 15 mins.

Once ready, open them up & add some of the fresh salad & a few pieces of the chicken & serve.
