Sambar powder is a quintessential spice blend from South India, traditionally used to flavor the beloved lentil stew known as sambar. This aromatic mix reflects the region's rich culinary heritage, combining spices that enhance the taste of vegetables and lentils. Today, sambar powder is not only a staple in Indian households but has also gained popularity in global kitchens, inspiring various adaptations and uses in diverse dishes.

Dry-roast the Guntur dry red chili, Byadgi dry red chili, and spicy dry red chili in a pan over medium heat until fragrant.
Add coriander seeds and cumin seeds (jeera) to the pan, continuing to roast until golden.
In the same pan, add black mustard seeds and fenugreek seeds, roasting until they pop.
Stir in turmeric stick (or turmeric powder) and black pepper seeds, cooking to release flavors.
Add toor dal and roast until golden brown, stirring frequently.
Incorporate curry leaves and asafetida, cooking for an additional minute.
Remove from heat and let the mixture cool completely.
Transfer the cooled mixture to a blender or spice grinder.
Blend until a fine powder forms, ensuring all ingredients are well incorporated.
Store the sambar powder in an airtight container in a cool, dry place.
