Cut the eggplant into long slices, approximately 1 cm thick.

Make diagonal cuts on the eggplant slices to help the oil seep in and cook them faster.

Sprinkle oil on both sides of the eggplant slices and season with salt.

Spread oil on the frying pan and set it on medium heat.

Cook the eggplant slices in the pan until they are golden brown and soft.

In another pan, heat 1 tbsp of ghee.

Add 8 to 10 curry leaves, 2 tbsp of peanuts, 1/2 tsp of cumin seeds, and 1 tsp of coriander seeds to the ghee and stir fry for 1 to 2 minutes.

Add 2 garlic cloves and approximately 1/4 tsp of hing (asafoetida) to the pan and stir for a moment.

Transfer the mixture to a mortar and pestle, add salt and fresh lime juice, and crush until it forms a coarse paste.

Once the eggplants are cooked, top them with the peanut dressing.
