1

Start by cutting 600 grams of chicken into julienne strips.

2

Add 1/2 teaspoon salt and 2 tablespoons cornflour to the chicken, mixing well with a little water.

3

Heat oil in a kadhai (wok) for shallow frying.

4

Once the oil is hot, add the chicken and fry until golden brown.

5

Remove the chicken from the kadhai and set aside.

6

In the same kadhai, add more oil and sauté minced garlic until fragrant.

7

Add julienned vegetables (capsicum and carrots) and stir-fry for about 1 minute until slightly tender.

8

Add 1/2 teaspoon black pepper, 1/2 teaspoon chili flakes (optional), and 1 teaspoon salt to the vegetables.

9

Mix well and then add the fried chicken back into the kadhai, stirring to combine.

10

In a separate pot, bring 4 glasses of water to a boil, adding 1/2 tablespoon salt and 1 tablespoon oil.

11

Add 200 grams of egg noodles to the boiling water and cook for 10 minutes, stirring occasionally to prevent sticking.

12

After 10 minutes, drain the noodles and rinse with cold water to stop the cooking process.

13

Add 2 tablespoons of oil to the noodles and mix well to coat them.

14

Return the noodles to the kadhai with the chicken and vegetables, heating everything together briefly before serving.
