1

Boil 1 liter of water with 1 tablespoon salt and 2 tablespoons oil.

2

Add a handful of egg noodles to the boiling water and cook for 7-8 minutes until 80% cooked, then drain and rinse with cold water.

3

Prepare vegetables: 1 handful of chopped carrots, 1 handful of chopped bell peppers, and 1.5 handfuls of chopped cauliflower.

4

In a bowl, mix 1/2 teaspoon roasted cumin powder, 1/2 teaspoon garam masala powder, 1/2 teaspoon coriander powder, 1/2 teaspoon red chili powder, and 1/2 teaspoon salt.

5

Add 350 grams of cubed boneless chicken and 1/2 tablespoon each of garlic and ginger paste to the spice mixture. Mix well.

6

Add 4 tablespoons of cornflour to the chicken mixture for crispiness and let it rest for 30 minutes.

7

Heat 2 tablespoons of oil in a pan and fry the marinated chicken for 3-4 minutes on medium-high heat until crispy.

In the same pan, add the chopped vegetables and stir-fry on high flame to retain crunchiness.

9

Add a little red chili sauce, soy sauce, and white vinegar to the vegetables, along with 2 tablespoons of dark soy sauce.
